How to Make Authentic Tacos

Warm fresh corn tortillas on an iron griddle (comal).

 Tacos are an easy meal that everyone loves. The ingredients are inexpensive and tasty.
I diced some smoked turkey.(Thanks to Hubby Dear) You can use any meat (chicken, pork, or roast). I added three chopped green onions, 1/2 tsp garlic granules (or fresh) and 1/4 tsp chipotle powder.

Place a large spoonful of meat in the warmed tortilla. Fold in half.

Fry in iron skillet (about 1/4 inch deep of oil). I use olive oil. The oil must be hot enough to sizzle when you place the fresh taco in the oil. If it is not hot enough the taco will be soggy and not crispy.

Serve with beans, fresh spinach or lettuce and shredded cheese, salsa and crema (optional)
When golden and crispy turn the tacos over once in the oil with tongs. Serve and eat immediately, cold tacos are no good.
